PASTRIES IN TUSCANY

Cantucci or Cantuccio is a small , hard almond biscuit which is often served with a dessert wine called Vin Santo. Cantuccie translates to little stones or almonds. The origin of Cantucci dates from the 12th century and was developed as a long shelf life food ideal for travel and the Roman Legions used them. The original almonds originated from Prato. Panforte (strong bread) is a round flat cake which originated from Siena. It dates from the 13th century by nuns and contains fruits and nuts. It was originally eaten during the Christmas season.
